Soda Cake

There is no other way to describe it- vegan baking is actual sorcery. Meringues from chickpea water, brownies from black beans, ice cream from sweet potatoes.. When I first heard about soda cakes I honestly I thought people were losing the plot so naturally I had to give it a go. I tried it. And I tried it again. And I got someone else to try it.

Lo and behold, it worked.

Here I share with you the quickest, easiest, laziest way to make a cake. And it’s vegan to boot.

You will need: 1 box of cake mix and 1 can of coke

For both of my attempts I used Betty Crocker’s Devil’s Food Cake Mix and a can of Coca-Cola. My friend used the same mix but used Diet Coca-Cola instead. Both cakes came out perfect.

Empty the cake mix into a bowl and slowly pour in the Cola, leaving about a mouthful in the can. Gently mix until it’s all incorporated, then pour into a lined cake tin and pop it into the oven to bake. That’s it.

Now you may be asking yourself, how can I finish this cake in the absolute laziest way possible? Well Betty’s got you covered there, too.

Thank you Betty.

People have had success with all kinds of different box mixes and fizzy drinks so if you can’t get hold of a Betty Crocker mix, a supermarket’s own brand should do- just be sure to check that it’s vegan. And if chocolate cake’s not your thing why not try one of these combinations?

Classic Vanilla Mix + Cream Soda = Victoria Sponge
Zesty Lemon Mix + Lemonade + Lemon Zest = Lemon Cake
Devil’s Food Cake Mix + Orangeade + Orange Zest = Chocolate Orange Cake

Most of the Betty Crocker Frostings are vegan if you don’t fancy making your own, just make sure to double check the ingredients. Have fun!
