There is no other way to describe it- vegan baking is actual sorcery. Meringues from chickpea water, brownies from black beans, ice cream from sweet potatoes.. When I first heard about soda cakes I honestly I thought people were losing the plot so naturally I had to give it a go. I tried it. And I tried it again. And I got someone else to try it.
Lo and behold, it worked.
Here I share with you the quickest, easiest, laziest way to make a cake. And it’s vegan to boot.
You will need: 1 box of cake mix and 1 can of coke
For both of my attempts I used Betty Crocker’s Devil’s Food Cake Mix and a can of Coca-Cola. My friend used the same mix but used Diet Coca-Cola instead. Both cakes came out perfect.
Empty the cake mix into a bowl and slowly pour in the Cola, leaving about a mouthful in the can. Gently mix until it’s all incorporated, then pour into a lined cake tin and pop it into the oven to bake. That’s it.

People have had success with all kinds of different box mixes and fizzy drinks so if you can’t get hold of a Betty Crocker mix, a supermarket’s own brand should do- just be sure to check that it’s vegan. And if chocolate cake’s not your thing why not try one of these combinations?
