Banana Bread

Before going vegan banana bread was a favourite in our kitchen- as soon as the bananas got slightly speckled my husband would give me a knowing nudge and say “guess you’ll have to make banana bread then”. Since going vegan I’ve been super busy trying out so many different recipes and buying so many different ready made vegan desserts that I kind of forgot all about banana bread (not to mention we eat way more bananas than we used to and they don’t even get a chance to go overripe any more!). That was until a few weeks ago when I saw a coffee shop selling vegan banana bread slices that made me want to go home and bake some. So I did, and here’s what I ended up with!

 

Banana Bread Recipe

3 very ripe bananas, mashed
200g plain flour, sifted
200g light brown sugar
60g vegan butter, melted
1 1/2 tsp baking powder
1/2 tsp bicarbinate of soda
1 tsp cinnamon
1/2 tsp ground ginger
1/4 tsp ground nutmeg

Preheat the oven to gas mark 4. Mix everything together until nicely incorporated then transfer to a greased and lined loaf tin. Pop it in the oven and check on it after 30 minutes, if it’s not quite cooked cover it with tinfoil and check on it every five minutes until it’s done. Once baked, I like to leave mine to cool before drizzling it with a thick water icing and chopped up walnut chunks.
