Lentil Soup

I threw together a recipe for lentil soup and it’s so good I make it about once a fortnight! Full of goodness and practically syn free (as in a quarter of a syn for the entire batch which is 3-4 servings!). I make it in an instant pot so it takes about 10 minutes altogether but the recipe could easily be adapted to cook it on the hob.

Simple Lentil Soup 🌿

1 cup dried red lentils, rinsed
1 medium onion, diced
2 large carrots, peeled and chopped
2 gloves of garlic, chopped
1 vegetable stock cube
1 tbsp smoked paprika
1 tbsp liquid smoke
2 cups water

And the secret ingredient.. FryLight butter flavoured cooking spray!!

Set instant pot to sauté and spray with FryLight. Add onions and garlic and stir. After a minute add in your carrot and stir again. Add the lentils, smoked paprika, liquid smoke, vegetable stock cube and water. Mix it all together and spray a little FryLight into it. Pop your Instant Pot lid on and set it to seal.

Cook manually on high pressure for 6 minutes. Once cooked you can manually release the pressure or let it release naturally. Blend the soup together and add more water to get it to your preferred consistency (I like to add a little more FryLight at this point and mix it all in). And that’s it! Tastes best when it’s cooled a little. The recipe is super versatile so you could add more veggies, or mix in some spinach or chilli but I love it as it is. Smoky and buttery and (pretty much) syn free.
