I made this dish recently and had so many people asking for the recipe that I couldn’t not share it. This is the perfect Friday night fakeaway and is absolutely delicious!
Vegan Tho Salt & Pepper Chips
1 garlic clove, diced
1 onion, diced
1 red pepper, sliced
1 green pepper, sliced
2 potatoes, peeled
3-4 tsp salt & pepper seasoning
1 tbsp soy sauce
Salt & pepper to taste
Preheat the oven to gas mark 6/200°C. Cut the peeled potatoes into chips and parboil for about 10-12 minutes.
While they’re cooking, heat a little oil in a frying pan and add the onion and garlic, cook for 2 minutes and then add the peppers. After a few more minutes add the salt & pepper seasoning and soy sauce, and stir it all together. Leave to cook on a low heat.
Drain the potatoes and let them dry slightly – you can use paper towels or a clean dish towel if they seem a bit too wet. Add to the pan with the peppers and gently mix it all together.
Line and grease a baking tray before evenly spreading the chips out on it. Spray with a little more oil and then pop into the oven for half an hour, giving them a mix about half way through et voilà! 😊
I like to add a little cracked black pepper and spring onions when serving 👌
A few more notes- I like to use jacket potatoes for this because they really remind me of chippy chips, but you can use whichever potatoes you prefer. I also use frozen onion and garlic to save time. You can purchase the salt & pepper seasoning from your local Chinese supermarket, or make your own. And that’s it! Serve and enjoy 😊
