Deconstructed dish

This is a little recipe I whipped up a while ago- my husband wanted some proteiny overnight oats that were easy to whip up and also tasty. It took a little bit of trial and error getting the right consistency but we got there in the end. My husband has this everyday for breakfast now and the flavours are fairly neutral so you can play around with it, adding cocoa, frozen fruit, chopped nuts or even desiccated coconut 🙂

Protein Overnight Oats

1/2 cup oats
1/2 cup plant milk (we use soy)
1 tbsp chia seeds
2 tsp ground flaxseed
1/8 cup protein powder (we use Pulsin soya protein)
1 tbsp peanut butter
1/4-1/2 tsp sugar or sweetener (we use Sweet Freedom fruit syrup or maple syrup)

Add everything to a jar and mix.. and that’s it. Store in the fridge overnight and it’s perfect by morning. You can also prep jars in advance by just adding the dry ingredients and adding the wet ingredients the night before.
